Ingredients
| 3 |
cups Oats |
| 1 |
cup White flour |
| 4 |
teaspoons Cinnamon |
| 2 |
teaspoons Baking powder |
| 2 |
teaspoons Baking soda |
| 1/4 |
teaspoon Nutmeg |
| 1/2 |
cup Brown sugar |
| 1/2 |
cup Apple juice |
| 1 |
teaspoon Vanilla extract |
| 1 |
apple, grated |
| 3/4 |
cup Raisins |
Directions
- In a food processor, combine 1 cup of oats with the flour, cinnamon, baking powder, baking soda, nutmeg & sugar. Process until the oats are finely ground & the rest of the ingredients are well mixed.
- Stir in the rest of the oats. Add the rest of the ingredients, in order, mixing well after each addition.
- Drop by tablespoonfuls onto cookie sheets.
- Bake at 400F for 12 to 15 minutes, checking often after 12 minutes to ensure that the cookies do not burn.
- Allow to cool slightly, then transfer to a wire rack.
