Claire's End of The Garden Stewed Vegetables Recipe

Called End of the Garden because it uses all the vegetables left in the garden at the end of summer. Serving size 3/4 cup

Ingredients
10 cups tomatoes, diced
3 cups onions, diced
5 cups peppers, green, diced
8 cups zucchini, diced
8 cups beans, snap
4 cups tomato juice
Directions
  1. Put everything into a pot and simmer, covered for 20 to 30 minutes, or until all the vegetables are cooked.

  2. Serve hot.

  3. There is no need to add salt because of the salt in the tomato juice.
