Aunt Sarah's Chocolate Mousse Recipe

Makes 4 servings


Chocolate mousse

Ingredients
4 large egg yolks
1/4 cups sugar
1 pinch salt
3/4 cups heavy cream
2 tbsp unsweetened cocoa powder
2 oz of bittersweet chocolate
Directions
  1. Finely chop the chocolate and set aside

  2. Whisk yolks, sugar, and salt together in a double boiler

  3. Continue to whisk until the sugar has dissolved and the mixture is warm to the touch

  4. Remove from the double boiler and quickly whisk in the chopped chocolate and cocoa until the mixture is smooth

  5. Cool the mixture to room temperature

  6. In the bowl, whip the cream until soft peaks form

  7. Whisk half of the whipped cream into the cooled chocolate mixture

  8. Gently fold the other half of the whipped cream with the rubber spatula

  9. Divide the mousse among serving dishes and chill it for at least 2 hours and at most 1 day. Remove 15 minutes prior to serving and garnish with chocolate shavings
