Chocolate mousse
| 4 | large egg yolks |
| 1/4 | cups sugar |
| 1 | pinch salt |
| 3/4 | cups heavy cream |
| 2 | tbsp unsweetened cocoa powder |
| 2 | oz of bittersweet chocolate |
- Finely chop the chocolate and set aside
- Whisk yolks, sugar, and salt together in a double boiler
- Continue to whisk until the sugar has dissolved and the mixture is warm to the touch
- Remove from the double boiler and quickly whisk in the chopped chocolate and cocoa until the mixture is smooth
- Cool the mixture to room temperature
- In the bowl, whip the cream until soft peaks form
- Whisk half of the whipped cream into the cooled chocolate mixture
- Gently fold the other half of the whipped cream with the rubber spatula
- Divide the mousse among serving dishes and chill it for at least 2 hours and at most 1 day. Remove 15 minutes prior to serving and garnish with chocolate shavings
