| 3 1/2 | oz tuna |
| 1/2 | bell pepper |
| 1/2 | small onion |
| 3 | tbsp. breadcrumbs, fine |
| 1 | tbsp. fresh cilantro |
| 1 | egg white |
| 1/4 | tsp. cayenne pepper |
| 50 | g (one) plum tomato (80401) |
| 1 | tsp. fresh lemon juice |
| 1 | tsp. olive oil |
- Drain and flake the tuna into a mixing bowl.
- Rinse and chop the pepper, onion and tomato. Beat egg white.
- Mix all ingredients except tomato and oil and shape the mixture into one or two patties, depending on desired size. Cover and refrigerate for about 20-30 minutes.
- Heat oil in a nonstick skillet over medium high heat and cook patty (patties) for about 3 to 4 minutes on each side until golden brown. Serve topped with chopped tomato.
