Thai Noodle Salad

Ingredients

g dried angel hair pasta |
| 40 |
ml soy sauce |

ml water |

tablespoons peanut butter |

tablespoon fresh lime juice |

teaspoon garlic, minced |
| 1 |
teaspoon fresh ginger, minced |

tsp cayenne pepper |

g chicken breast,skin removed, chopped |
| 160 |
g bell pepper, red, cut into thin strips |

g spring onion |
Directions
- Cook vermicelli according to package instructions, drain and set aside.
- In a medium saucepan, combine soy sauce, broth, peanut butter, lime juice, ginger and crushed red pepper. Cook over medium-low heat until peanut butter is melted.
- Add cooked pasta and toss to coat evenly.
- Stir in cooked chicken, red pepper, spring onions and coriander.
- Serve with lime wedges.
