Spinach Quiche

Makes 6 servings

A light and fluffy quiche!

Ingredients
4 ounces Dannon plain nonfat
1/2 cup skim milk
1/2 cup Egg Beaters
8 ounces Cabot 75% light Cheddar cheese, shredded
10 ounce frozen chopped spinach, thawed and squeezed dry
1/4 cup onion, chopped
1 Compliments pie shell
Directions
  1. Whisk together yogurt, milk, and Egg Beaters.

  2. Layer shredded cheese, spinach, and onion in the unbaked shell. Pour egg mixture over.

  3. Cover with foil. Bake for 45 minutes at 400 degrees. Remove the foil and bake for an additional 10-15 minutes or until golden brown.
