Herbed Crab Sandwiches Recipe

Crab and cream cheese are a great combination. Adapted from the American Diabetes Association. lump crab meat Original Miracle Whip fresh parsley fresh tarragon, scallions low-fat cream cheese, eggs, Dijon mustard, English muffins, tomato slices cvt

Ingredients
1 1/2 lb canned crab meat (15141)
1/4 cup Original Miracle Whip (4027)
1 tbsp minced fresh parsley
1 tbsp minced fresh tarragon
2 tbsp minced scallions
6 oz low-fat cream cheese (1031)
2 eggs, beaten
1 tsp Dijon mustard
3 (?) English muffins, split and toasted
6 slices tomato
Directions
  1. Combine the crab, Miracle Whip, parsley, tarragon, and scallions in a medium bowl.

  2. In a separate bowl, beat together the cream cheese, eggs, and mustard.

  3. Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes.

  4. Add the tomato slices and broil.
