Nigella Lawson's recipe. I just use less olive oil and omit the onions. The flavor is best with Thighs, Drumstick or Game hens. I often leave skin on just for hubby because it's delicious, but I only eat the meat. :)
Haven't tried it with breast. If you do, let me know how it turns out.
This is only for the marinade. Please add the calories of whatever type of chicken or meat you use on by yourself.

Ingredients

cup lemon juice, about juice of one lemon |
| 1 |
tablespoon olive oil |
| 2 |
tablespoon rosemary, Dried or Fresh about 2 sprigs |
| 1/4 |
teaspoon salt |
| 1/4 |
teaspoon pepper |
Directions
- Mix all ingredients together with a game hen, drumsticks, or thighs together. Dark meat usually tastes the best with this recipe.
- Leave this in a ziplock bag or in a glass pan to marinade for at least one hour. Turn occassionally if using glass pan.
- When ready to cook, pour the entire content into a glass pan or baking tray.
- Bake for 30 minutes at 375F or until chicken is cooked through.
- If cooking whole bird, always let it rest with an aluminum foil tent for 10-15 minutes before carving.
