spinach and veggie matzo kugel
| 4 | ounces matzo |
| 4 | eggs |
| 10 | ounces spinach |
| 1 1/2 | cups grated carrot |
| 1 | cup onion |
| 2 | tbsp oil |
| 1/2 | cup celery |
| 1/2 | cup bell pepper |
| 1/2 | tsp salt |
| 2 | cloves garlic |
saute onion, grated carrot, celery, garlic and salt until veggies are soft. Add roasted red pepper and chopped, drained spinach. Let cool for a while. Crumble Matzo, soak for a few minutes in warm water til soft but not mush. Squeeze dry. Miz with eggs and veggies, bake 45 min 350 degree oven. Let cool 15 min before serving.Categories
