Scaruso Matzo Kugel Recipe

spinach and veggie matzo kugel

Ingredients
4 ounces matzo
4 eggs
10 ounces spinach
1 1/2 cups grated carrot
1 cup onion
2 tbsp oil
1/2 cup celery
1/2 cup bell pepper
1/2 tsp salt
2 cloves garlic
Directions
saute onion, grated carrot, celery, garlic and salt until veggies are soft. Add roasted red pepper and chopped, drained spinach. Let cool for a while. Crumble Matzo, soak for a few minutes in warm water til soft but not mush. Squeeze dry. Miz with eggs and veggies, bake 45 min 350 degree oven. Let cool 15 min before serving.
