passover casserole

Makes 8 servings

Ingredients
1 cup part-skim ricotta cheese
1/3 cup mozzarella
1 potato, sliced
2 zucchini, sliced
1 cup mushrooms, halved
1 pound asparagus
1 tbsp olive oil
2 tbsp garlic
2 tbsp parsley
1 salt and pepper
Directions
  1. line baking dish with potatoes. alternate layers of zucchini, mushrooms, cheese, garlic and parsley + salt and pepper. Put a layer of asparagus on top and drizzle olive oil over it.

  2. Bake at 350-400 for 40 minutes.
