| 1 1/2 | slices whole-wheat bread, enough for 1 cup cubes |
| 3/4 | cup milk, scalded (tiny bubbles around edge of pan when heated) |
| 3/4 | cup orange juice |
| 1 | tbsp grated orange rind |
| 4 | egg yolks |
| 1/2 | cup sugar |
| 1/8 | tsp salt |
- Preheat oven to 375 F.
- Soak bread cubes in milk ten minutes.
- Add the orange juice and peel, yolks, sugar and salt. Stir until sugar has dissolved.
- Pour into 4 buttered individual molds. Dot with butter and place in a pan of hot water.
- Bake 30 minutes or until knife inserted one inch from edge comes out clean. Chill. Unmold and serve.
