Middle Eastern style salad
| 1 | cup bulgur, medium or fine |
| 3 | tbsp extra-virgin olive oil |
| 3 | tbsp fresh lemon juice |
| 1 1/2 | tsp grated fresh lemon peel |
| 5 2/5 | g dried coriander leaf (3 tbsp) |
| 2 | cup cucumber, peed and diced |
| 45 | g Anaheim chili pepper, diced (3/4 cup) |
| 3/4 | cup chopped green onion |
- Pour 1 3/4 - 2 cups boiling water over the bulgur in a medium bowl and let stand until tender and liquid absorbed, 10-15 minutes (drain if necessary).
- Make the dressing: whisk the oil, lemon juice, lemon peel and salt with a fork.
- Add cucumber, pepper, and onion to drained bulgur, mix well with dressing.
- Transfer to a bowl and serve on a bed of Romain lettuce leaf.
