Tabbouleh Recipe

Middle Eastern style salad

Ingredients
1 cup bulgur, medium or fine
3 tbsp extra-virgin olive oil
3 tbsp fresh lemon juice
1 1/2 tsp grated fresh lemon peel
5 2/5 g dried coriander leaf (3 tbsp)
2 cup cucumber, peed and diced
45 g Anaheim chili pepper, diced (3/4 cup)
3/4 cup chopped green onion
Directions
  1. Pour 1 3/4 - 2 cups boiling water over the bulgur in a medium bowl and let stand until tender and liquid absorbed, 10-15 minutes (drain if necessary).

  2. Make the dressing: whisk the oil, lemon juice, lemon peel and salt with a fork.

  3. Add cucumber, pepper, and onion to drained bulgur, mix well with dressing.

  4. Transfer to a bowl and serve on a bed of Romain lettuce leaf.
