Baked Scallop Casserole Recipe

fresh scallops, lowfat milk, pepper, lemon juice, salted butter, Ritz crackers If frozen, buy 1.3 pounds due to the large amount of discarded liquid when thawed. cvt

Ingredients
329 g (1 lb) fresh scallops, drained and rinsed
1/3 cup lowfat milk (1082)
1/4 tsp pepper
1 tsp lemon juice (Buy for next time!)
26 g (1 1/2 tbsp) salted butter
73 g (3/4 cup, 18 crackers) Ritz whole wheat crackers, crushed (82448)
Directions
  1. Place rinsed scallops in a casserole dish. Combine milk pepper and lemon juice and pour over scallops. Bake at 350 F for 12 minutes.

  2. Crush crackers into crumbs; add melted butter and mix well. Spread evenly on top of of the baked scallops. Broil on second rack until just golden, about 2 minutes, checking every 20 seconds after 1 minute, with the broiler element partially preheated.
