Bacon Wrapped Artichoke Hearts Recipe

Difficulty: Easy Prep Time: 10 minutes Cook Time: 15 minutes Yield: 4 servings Great appetizer. I made these on the fly and they were great. They disappeared in no time. If you have trouble with the bacon getting done & crisp, I used the precooked bacon and they came out great! No bacon grease drippings to contend with and they were a snap to make. I used the recommended cooking time and temperature.

Ingredients
12 ounces marinated artichoke heart quarters(1 jar), drained and liquid reserved (recommended: Luna Rosa)
1/2 pound center cut bacon(9 slices), cut in half (recommended: Oscar Meyer)
Directions
  1. Preheat the oven to 425 degrees F.

  2. Line a baking sheet with aluminum foil.

  3. Wrap the artichoke heart quarters with the half slices of bacon. Secure with a toothpick.

  4. Place on the baking sheet and drizzle with the reserved artichoke liquid.

  5. Roast in the oven for 12 to 15 minutes, or until lightly browned. Serve hot.
