Special K Oatmeal Cookies Recipe

Makes 36 servings


Low cal cookies!! Oatmeat and peanut butter. Use diet, lite, low sodium, fat free, etc, to make the calorie count even lower.

Ingredients
2 eggs
2/3 cup sugar
1/4 cup brown sugar
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp vanilla
1 cup rice flour
3/4 cup peanut butter
2 cups oatmeal
Directions
  1. Combine sugars and eggs well. Add peanut butter. Mix ETREMELY Well. Add cinnamon, baking soda, vanilla extract. Stir in the rice flour (or finely crushed special K cereal). Fold in Oatmeal. Raisins, nuts, etc would be delish!

  2. Spoon TBS of the dough onto tin foil covered baking pan

  3. Bake at 350 until brown on edges.
