Low cal cookies!! Oatmeat and peanut butter. Use diet, lite, low sodium, fat free, etc, to make the calorie count even lower.
| 2 | eggs |
| 2/3 | cup sugar |
| 1/4 | cup brown sugar |
| 1 | tsp baking soda |
| 1 1/2 | tsp cinnamon |
| 1/2 | tsp vanilla |
| 1 | cup rice flour |
| 3/4 | cup peanut butter |
| 2 | cups oatmeal |
- Combine sugars and eggs well. Add peanut butter. Mix ETREMELY Well. Add cinnamon, baking soda, vanilla extract. Stir in the rice flour (or finely crushed special K cereal). Fold in Oatmeal. Raisins, nuts, etc would be delish!
- Spoon TBS of the dough onto tin foil covered baking pan
- Bake at 350 until brown on edges.
