Roasted Potatoes

Ingredients
2 1/2 pounds red potatoes
1/4 cup extra virgin olive oil
2 tbsp lemon juice
1 tsp salt
1/2 tsp oregano
1/2 tsp thyme
1 tbsp rosemary
1/4 tsp paprika
1/2 tsp pepper
Directions
  1. Preheat oven to 425

  2. Wash, rinse, and quarter potatoes

  3. Combine olive oil, lemon juice, salt and spices in large bowl. Mix well.

  4. Add potatoes and toss.

  5. Arrange on oiled baking sheet and bake for about 35 minutes.

  6. Turn potatoes every 15 minutes.

  7. Serve immed.
