Lemon Buttermilk Chicken Recipe

A nice, simple way to prepare boneless, skinless chicken breasts. The lemon and buttermilk tenderize the chicken and add a nice tang.

Ingredients
1/2 cup low-fat buttermilk
1 tbsp. Lemon juice, (Juice of half a lemon)
1 tbsp lemon zest
16 ounce boneless, skinless chicken breasts
Directions
  1. Combine buttermilk, lemon and lemon zest in a glass baking dish or in a large resealable bag.

  2. Add chicken. Turn to coat. Marinate in the refrigerator for 4 hours.

  3. Preheat broiler.

  4. Coat broiler rack with nonstick cooking spray.

  5. Broil chicken breasts 5-6 minutes per side, or until a thermometer reads 165 degrees.
