This easy and hearty main dish pie combines frozen chopped spinach with different types of cheese and onion for a vegetarian entree.

Ingredients

cups low fat cottage cheese |
| 1 |
cup mozzarella cheese |
| 1/4 |
cup parmesan cheese |
| 4 |
eggs |
| 10 |
ounce of frozen spinach, thawed |
| 1 |
cup zucchini, chopped |
| 1/2 |
cup onion, chopped |
| 1 |
cup feta cheese |
| 1 |
cloves of garlic, minced |
| 1 |
frozen pie crust 9" |
Directions
- Preheat oven to 400 degrees.
- Drain spinach very well in colander, using paper towels to soak up excess moisture.
- Cook onion, zucchini and garlic in a heavy skillet until tender, about 4 minutes.
- Beat the eggs in a large bowl. Add spinach, cheeses, onion, zucchini and garlic.
- Bake for 35-40 minutes or until knife inserted in center comes out clean. Let cool 5 minutes before slicing.
