| 2 | cups water |
| 1/2 | cup fresh lemon juice |
| 1 | cup quinoa |
| 1/4 | cup olive oil |
| 3 | medium ripe tomatoes |
| 2 | tablespoons fresh mint |
| 1 1/2 | cups parsley, coarsely chopped |
| 1 | cup cucumber, chopped |
- Cook quinoa in water.
- Mix with other ingredients.
