I replaced the oil in the original recipe with apple sauce and replaced half the flour with whole wheat. These are so good you won't believe it!

Ingredients

cup wheat bran |

cup flour |
| 3/4 |
cup whole wheat flour |
| 1/2 |
cup brown sugar, packed |
| 1 1/2 |
teaspoons ground cinnamon |
| 1 1/4 |
teaspoons baking powder |
| 1/2 |
teaspoon baking soda |
| 1/2 |
teaspoon salt |
| 3/4 |
cup buttermilk |
| 2 |
eggs |
| 1/2 |
cup applesauce |
| 2 |
tablespoons molasses |
| 1 1/2 |
cups carrots, grated |
| 1 |
cup raisins |
Directions
- In a large bowl, combine the first eight ingredients, Combine the eggs, buttermilk, applesauce and molasses; stir into dry ingredients just until moistened. Fold in carrots and raisins.
- Fill 12 greased or paper lined muffin cups and bake at 350 for 25-30 min
