bran carrot muffins

Makes 12 servings

I replaced the oil in the original recipe with apple sauce and replaced half the flour with whole wheat. These are so good you won't believe it!

Ingredients
1 cup wheat bran
3/4 cup flour
3/4 cup whole wheat flour
1/2 cup brown sugar, packed
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
2 eggs
1/2 cup applesauce
2 tablespoons molasses
1 1/2 cups carrots, grated
1 cup raisins
Directions
  1. In a large bowl, combine the first eight ingredients, Combine the eggs, buttermilk, applesauce and molasses; stir into dry ingredients just until moistened. Fold in carrots and raisins.

  2. Fill 12 greased or paper lined muffin cups and bake at 350 for 25-30 min
