Adapted from Enlightened Kosher Cooking. For the real thing substitute turkey with 1 whole chicken and sugar substitute.
| 226 | g garlic (4 whole bulbs) |
| 1/2 | tsp sugar |
| 1/2 | tbs olive oil |
| 1 | kg turkey breast |
| 1/2 | tsp olive oil |
| 1 | tbs paprika |
| 1 | tbs parsley |
- Peel off most, but not all the papery layers of the garlic bulbs then clean and cut off the tops
- Sprinkle the sugar, or sugar substitute, and 1/2 the oil over each.
- Mix the remaining spices and oil into a paste then rub that on all sides of the meat (chicken may be processed whole or cut into 8ths) then place into a Dutch oven or heavy pan with lid and bake, covered for 2 hours in a 475 F oven.
- To brown, remove the cover the last 15 minutes or so.
