Chicken Breasts Stuffed with Goat Cheese and Roasted Red Pepper Tapenade Recipe

Yummy stuffed chicken - healthy 1/2 breast portions are only 359 calories. Serve hot, chilled or at room temperature. Serve as main course or sliced as a wonderful appetizer.

Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon shallot, minced
1 teaspoon fresh thyme leaves, minced
6 cups fresh spinach leaves, washed
1 salt and pepper to taste
1/2 cup sweet red peppers, roasted and chopped
3 tablespoons olives, pitted and chopped (use Kalnmata)
1 tablespoon capers, chopped
1 teaspoon balsamic vinegar
2 breasts of chicken, bone and skin removed
4 ounces goat cheese
1 tablespoon olive oil (for brushing chicken)
1/4 cup parsley, chopped
Directions
  1. Preheat oven to 375

  2. Heat the olive oil in a large skillet over medium heat.

  3. Sauté garlic, shallot and thyme for 2 minutes.

  4. Add spinach, and sauté for 1 minute longer (until just wilted.)

  5. Season with the salt and pepper.

  6. Remove the skillet from the heat and let cool.

  7. In a bowl mix the roasted red peppers with the olives, capers, and balsamic vinegar.

  8. Place about 1/4 cup of the spinach mixture in the center of each breast.

  9. Evenly divide the goat cheese among the chicken breasts, placing a small piece over the spinach; then top with 1 tablespoon of the roasted peppers.
