Curried Garbanzo Beans Recipe

mildly spiced garbanzo beans with carrot and cauliflower

Ingredients
2 cups mature dried garbanzo beans
8 cups water
2 cups onion, chopped
2 tbsp olive oil
1 cup carrot, chopped
1 cup cauliflower, chopped
1 tbsp turmeric
1 1/2 tsp cumin
3/4 tsp coriander
1/4 tsp cayenne
1 tsp salt
Directions
Soak garbanzo beans overnight. Before cooking rinse beans thoroughly. Bring beans in water to a boil and skim scum until it stops forming. Simmer covered checking periodically to ensure water level. Meanwhile saute onions in olive oil until soft. Add spices and cook for about 5 minutes. Add beans when ready in liquid. Add vegetables and simmer uncovered until soft. Add salt to taste. Best served with brown rice.
