mildly spiced garbanzo beans with carrot and cauliflower
| 2 | cups mature dried garbanzo beans |
| 8 | cups water |
| 2 | cups onion, chopped |
| 2 | tbsp olive oil |
| 1 | cup carrot, chopped |
| 1 | cup cauliflower, chopped |
| 1 | tbsp turmeric |
| 1 1/2 | tsp cumin |
| 3/4 | tsp coriander |
| 1/4 | tsp cayenne |
| 1 | tsp salt |
Soak garbanzo beans overnight. Before cooking rinse beans thoroughly. Bring beans in water to a boil and skim scum until it stops forming. Simmer covered checking periodically to ensure water level. Meanwhile saute onions in olive oil until soft. Add spices and cook for about 5 minutes. Add beans when ready in liquid. Add vegetables and simmer uncovered until soft. Add salt to taste. Best served with brown rice.Categories
