Lemon Chicken with Pasta
| 2 | breast of chicken, skinned and deboned |
| 3 | tbsp flour |
| 2 | tbsp olive oil |
| 1 | cup chicken broth |
| 3 | tbsp lemon juice |
| 1/2 | tsp salt |
| 1/4 | tsp pepper |
| 1 | tsp onion powder |
| 1/2 | tsp thyme |
| 6 | cups whole wheat pasta |
- Mix flour, salt and peper. Lightly coat the chicken in the flour mixture. Reserve the extra.
- Cook the pasta as per directions on the box. Reserve on the side.
- In large skillet, warm 1 tbsp olive oil over medium heat. Add chicken and brown on one side. Add rest of oil. Turn chicken and brown well. Remove chicken.
- Stir in reserved flour and stir until incorporated. Add broth, lemon juice, thyme, and onion powder. Bring to a boil, stirring constantly.
- Serve chicken on a bed of pasta topped with sauce.
