Really really moist, really good texture and flavor. The creamed corn makes ALL the difference. Add jalapenos if you wish to kick it up a knotch. Even my dad and fiance liked them, and they cringe at the words "fat free" or "lowfat"....! I didn't tell them they were healthy. (I used fat free milk, and I'm not sure if the recipe took into account the calories for that. It wouldn't let me put "fat free milk" so I just left it as "milk". You can certainly alter the recipe by adding an extra tablespoon of sugar, too).

Ingredients

tablespoon baking powder |

tablespoon sugar |

teaspoon salt |
| 1/3 |
cup unsweetened apple sauce |
| 3/4 |
cup milk |
| 2 |
egg whites |
| 15 |
ounces creamed corn |
Directions
- Preheat oven to 375 F.
- Coat 9X13 baking dish, or 12 muffin cups with Pam.
- Mix all ingredients together.
- Pour batter into dish, or evenly into muffin cups (they'll be pretty full, but it's ok!)
- Bake for about 25 min, give or take a few...wasn't watching the timer (oops).
