Corned Beef & Cabbage Recipe

Makes 12 servings


traditional corned beef receipe with all veg (1 serving is a meal)

Ingredients
3 lb corned beef (with seasoned packet)
1 clove garlic, minced (or 1/2 t minced garlic in a jar)
1 large onion, quartered
2 heads cabbage ,(small), quartered
9 red potatoes (2 lb), halved
3 carrots, cut in thirds (or about 9-12 mini-snack carrots)
2 gal water
Directions
  1. place corned beef tip (or flat) and the packet in a LARGE pot. cover with water--add garlic and onion and 1 quarter of a cabbage, bring to boil, simmer about 2-1/2 hours. **

  2. remove meat from broth. skim fat from liquid. add potatoes and carrots. return to boil and then simmer for 10 min.

  3. add cabbage and simmer an aditional 15 min.

  4. ** check at about 2 hours. if seems about done procede to adding veg.

  5. (i cook outside in large pot over "turkey fryer" burner_
