The easiest I have found so far. NO NEED TO KNEAD :)
The hand mixer takes it hard though so maybe try the "Kitchen Aid" Mixer
(Example only, not intended as an advertisement).
My husband and I like the crunchy exterior and we enjoyed the spice.
I sifted six times,maybe excessive but I read somewhere that it was the proper way (normally I "cheat" and only sift 2x)

Try it for dessert with Vanilla ice cream,ice milk , or frozen yogurt (Sugar / Fat: free, reduced, etc.)
I think for a treat the calorie expenditure was worth it...for me.
Smaller slices-lasts longer-fewer calories at a time

Ingredients

c. all-purpose flour |
| 3 |
tsp. baking powder |
| 1/2 |
tsp. salt |
| 3/4 |
c. Splenda |
| 2 |
eggs |
| 1/2 |
c. margarine |
| 1 |
c. milk,fat-free |
| 1 |
c. raisins,seedless |
| 1 |
tsp. ground cinnamon |
| 1/2 |
tsp. ground nutmeg |
| 1/4 |
teaspoon allspice |
Directions
- Sift together the flour, baking powder, cinnamon, nutmeg, salt, and allspice.
- In a separate mixing bowl, cream margarine and sugar.
- Add beaten eggs, milk, and sifted dry ingredients and mix until well blended
- Fold in raisins.
- Lightly sprinkle top with Splenda.
- Lightly grease 9x5x3-inch loaf pan (I used Pam)
- Bake in loaf pan 40 to 60 minutes at 350 degrees.
- Loaf should be golden and toothpick test maybe SLIGHTLY doughy but just...if it is like thick paste then add 5-10 minutes and test again.
- Cool soda bread in pan for 5 minutes, then turn out onto a rack to cool completely.
