Easy - delicious - nutritious
| 3 | cups flour |
| 1 | cup raisins |
| 1/4 | cup sugar |
| 1 | tbsp. caraway seeds (optional) |
| 2 | tsp. baking powder |
| 1 | teaspoon salt |
| 1/2 | tsp. baking soda |
| 1 1/2 | cups lowfat buttermilk |
- spray an 8 or 9 inch round cake pan with vegetable cooking spray
- combine all dry ingredients in large bowl, stir to coat raisins thoroughly
- add buttermilk, stir until well-mixed and soft dough forms
- turn out of bowl onto floured surface
- knead dough just a few times until it all holds together
- pat dough into prepared pan - not all the way to the edge
- bake at 350 degrees for 45 minutes until a toothpick comes out clean - bread should be golden
- Let cool in pan 5 minutes, loosen nderneath with a knife, then cool bread on a rack for 10 or 15 minutes.
- Really wonderful served warm!
