Irish Soda Bread Recipe

Makes 24 servings


Easy - delicious - nutritious

Ingredients
3 cups flour
1 cup raisins
1/4 cup sugar
1 tbsp. caraway seeds (optional)
2 tsp. baking powder
1 teaspoon salt
1/2 tsp. baking soda
1 1/2 cups lowfat buttermilk
Directions
  1. spray an 8 or 9 inch round cake pan with vegetable cooking spray

  2. combine all dry ingredients in large bowl, stir to coat raisins thoroughly

  3. add buttermilk, stir until well-mixed and soft dough forms

  4. turn out of bowl onto floured surface

  5. knead dough just a few times until it all holds together

  6. pat dough into prepared pan - not all the way to the edge

  7. bake at 350 degrees for 45 minutes until a toothpick comes out clean - bread should be golden

  8. Let cool in pan 5 minutes, loosen nderneath with a knife, then cool bread on a rack for 10 or 15 minutes.

  9. Really wonderful served warm!
