Bahamian Crab & Rice Recipe

Delicious Authentic Bahamian dish

Ingredients
500 g crabs ( about 6 medium crabs)
2 1/2 cups basmati rice
3 cups water
14 oz pigeon peas
2 knorr cubes
7 tbs tomato paste
1 tsp salt
2 tsp thyme
60 g green sweet pepper
3 stalks celery
10 g scotch bonnet chile
2 tbs olive oil
Directions
  1. Clean crabs by scrubbing

  2. remove biters and bodyof crab and keep.

  3. discard, smaller legs

  4. reserve Tomalley/butter/fat from body of fat, keep in seperate bowl.

  5. In large pot add oil and add chopped green bell pepper, chopped onion and chopped celery.

  6. fry until soft about 5 mins.

  7. Add Crab tomalley, tomato paste & drained pigeon peas.

  8. Add chile.

  9. Fry for 5 mins.

  10. Add water and bring to boil.

  11. Add crab bodies & biters.

  12. Add rice, bring to boil again then reduce to simmer.

  13. add salt seasoning cubes and thyme.

  14. Cover pot and cook for 30-40 mins on low heat until water is absorbed.
