Very basic chicken soup!
| 3 | cups chicken thighs |
| 3 | tbsp extra virgin olive oil |
| 2 1/2 | cups celery, coarsely chopped |
| 2 1/2 | cups carrots, coarsely chopped |
| 1 1/2 | tsp garlic, minced |
| 10 | cups water |
| 5 | cubes chicken bouillon |
| 1 | tsp black pepper |
| 1 1/2 | cups onion, chopped |
| 2 | cups potatoes, cubed |
- In a large stock, brown chicken in olive oil. Once chicken is browned add all remaining ingredients.
- Let it cook for at least 2 hours on a slow simmer.
- I usually serve with a 1/2 cup of rice.
