Tofu Brown Rice Recipe

easy, low fat, high fiber recipe

Ingredients
10 oz firm tofu, cubed
1 medium bell pepper, cut into thin strips
2 stalks celery, bias sliced
1 carrot, bias sliced
1/2 large onion, sliced
6 cups cooked brown rice
Directions
  1. In a large non-stick fry pan, over medium-high heat, combine tofu and vegetables. Cook until tofu is browned and vegetables are tender.

  2. Combine tofu mixture and cooked rice
