Massamun Curry Recipe

Thai Curry

Ingredients
500 g chicken breast, skin removed, cubed
400 ml coconut milk
150 g aubergine, sliced
200 g potatos, boiled, cut into chunks
3 tsp massamun curry paste
Directions
  1. Heat chicken in a pan until partially cooked.

  2. Add all other ingredients.

  3. Simmer for 25 minutes.

  4. Serve with rice.
