Low fat and cholesterol free! This bread makes a great dessert or breakfast with a little light cream cheese. Based on an original recipe from The Dobbin House restaurant in Gettyburg, PA.
| 1 1/2 | cups dates, pitted and chopped |
| 2 1/4 | cups water, boiling |
| 3 | teaspoons baking soda |
| 1 | cup pecans or walnuts, chopped |
| 2 | cups sugar |
| 1 1/2 | tablespoons applesauce |
| 1 1/2 | tablespoons vegetable oil |
| 1/2 | cup Egg Beaters |
| 1 | teaspoon salt |
| 4 1/2 | cups all-purpose flour |
| 1 | teaspoon vanilla extract |
- Combine baking soda with the boiling water. Soak the dates in the water and baking soda solution for 30 minutes.
- Cream sugar, vegetable oil, and applesauce together. Add Egg Beaters, vanilla, dates, nuts, flour, and salt.
- Divide batter equally between two loaf pans, lightly coated with cooking spray. Bake 1 hour at 300 degrees F. Can be frozen when cool.
