Low Fat Date Nut Bread Recipe

Low fat and cholesterol free! This bread makes a great dessert or breakfast with a little light cream cheese. Based on an original recipe from The Dobbin House restaurant in Gettyburg, PA.

Ingredients
1 1/2 cups dates, pitted and chopped
2 1/4 cups water, boiling
3 teaspoons baking soda
1 cup pecans or walnuts, chopped
2 cups sugar
1 1/2 tablespoons applesauce
1 1/2 tablespoons vegetable oil
1/2 cup Egg Beaters
1 teaspoon salt
4 1/2 cups all-purpose flour
1 teaspoon vanilla extract
Directions
  1. Combine baking soda with the boiling water. Soak the dates in the water and baking soda solution for 30 minutes.

  2. Cream sugar, vegetable oil, and applesauce together. Add Egg Beaters, vanilla, dates, nuts, flour, and salt.

  3. Divide batter equally between two loaf pans, lightly coated with cooking spray. Bake 1 hour at 300 degrees F. Can be frozen when cool.
