Super easy black bean soup. Takes six minutes in the pressure cooker. 194 calories per serving. I use a low fat chicken broth, but the recipe analyzer doesn't understand low fat.

Ingredients

cups black beans, soaked overnight |
| 4 |
cups chicken broth, low sodium |
| 2 |
tomatoes,diced |
| 2 |
garlic cloves, minced |
| 1/4 |
cup salsa |
Directions
- Soak the beans overnight. (1 cup of dried beans makes 2 cups of cooked beans.)
- Add all ingredients into pressure cooker EXCEPT salsa.
- Bring to full pressure, then cook for six minutes.
- Cool enough to open pressure cooker, then open lid.
- Add salsa.
- Puree.
- Yes, you can make this without a pressure cooker. It takes about 45 minutes in a pot on the stove or 8 hours in a crock pot on low.
