Grilled Vegetables - Version 1
| 1 | large eggplant |
| 3 | zucchini |
| 4 | large mushrooms or 1 portobello sliced |
| 1 | green pepper |
| 1 | large onion |
| 1/4 | cup olive oil |
- Slice eggplant 1/2" slices, salt both sides, drain for 30 min
- Slice all other vegetables 1/4-1/3".
- Drip olive oil on both sides of vegetables, salt and pepper
- Grill until tender 2-8 min/side (onions take longest)
