Grilled Vegetables - Version 1

Ingredients
1 large eggplant
3 zucchini
4 large mushrooms or 1 portobello sliced
1 green pepper
1 large onion
1/4 cup olive oil
Directions
  1. Slice eggplant 1/2" slices, salt both sides, drain for 30 min

  2. Slice all other vegetables 1/4-1/3".

  3. Drip olive oil on both sides of vegetables, salt and pepper

  4. Grill until tender 2-8 min/side (onions take longest)
