Vegetarian Pasta dish

Ingredients
2 lb. eggplant
3 cups marinara sauce
1 tbsp extra virgin olive oil
Directions
  1. Saute Eggplant until almost translucent.

  2. Add Marinara, simmer.

  3. Serve over pasta.
