Carrots in orange juice and raisins or currants
| 1 1/2 | cups carrots |
| 1 | tablespoon olive oil |
| 1 | tablespoon brown sugar |
| 1/3 | teaspoon ground cinnamon |
| 1/4 | teaspoon ground cumin |
| 1 | dash of cayenne pepper,or to taste |
| 1/3 | cup orange juice, calcium fortified |
| 2 1/2 | tablespoons golden raisins |
| 1 | salt to taste |
| 1 | freshly ground black pepper |
- Melt the olive oil in a large saucepan over moderate heat. Add the sugar, spices and carrots and stir over low heat for a few minutes.
- Add the orange juice and the currants with some of their soaking liquid.
- Bring to a boil. Quickly reduce the heat and simmer the carrots, covered, until tender. Adjust seasoning to taste.
