Indian gravy

Ingredients
2 cups mixed vegetables ,chopped
3 cups water
1/2 tsp tamarind pulp
1/2 tsp turmeric powder
1 tsp chili powder
1 tsp curry powder
1 tsp coriander powder
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp olive oil
1/2 tsp clarified butter
1 1/2 cups lentils
1 tsp salt
Directions
  1. pressure cook lentils with equal parts water and turmeric ,half the cumin seeds and 1/3 tsp chilipowder...until easily smashed against the back of the spoon.

  2. lightly fry the vegetables(carrots,zucchni,okra tomatao potato,eggplant,onion). and then bring it to aboil with tamarind pulp mixed in 3 cups of water....add the lentils and add coriander pwdr and sambar curry powder..

  3. temper wih mustard seeds, cumin seeds in clarified butter with a few curry leaves and a red chili added witha pinch of asefotida.
