| 2 | cups white sugar |
| 2 | cups grated zucchini |
| 2 | tsp vanilla extract |
| 1 | tsp salt |
| 1/4 | tsp baking powder |
| 3 | cups all-purpose flour |
| 3 | tsp ground cinnamon |
| 1 | tsp baking soda |
- Pre-heat oven to 325 degrees F. Grease and flour 2 8x4 loaf pans.
- Mix together eggs, oil, sugar. Added vanilla and zucchini. Add dry ingredients. Mix well.
- Bake for 60-70 minutes until done.
