Great low carb meal
| 2 | pounds ground beef |
| 1 | large eggplant |
| 1 | small onion |
- Saute chopped up onion.
- Add ground meat.
- Brown ground meat and onions.
- Add peeled, cubed or thinly sliced eggplant and salt, pepper and Tony's to mixture. Add water to cover.
- Bring to boil. Stir often.
- Lower heat and cook until eggplant is 'melted' into the meat.
- Divide into servings and place in bags to put in freezer for an easy meal later.
