Eggplant and Ground Meat Recipe

Great low carb meal

Ingredients
2 pounds ground beef
1 large eggplant
1 small onion
Directions
  1. Saute chopped up onion.

  2. Add ground meat.

  3. Brown ground meat and onions.

  4. Add peeled, cubed or thinly sliced eggplant and salt, pepper and Tony's to mixture. Add water to cover.

  5. Bring to boil. Stir often.

  6. Lower heat and cook until eggplant is 'melted' into the meat.

  7. Divide into servings and place in bags to put in freezer for an easy meal later.
