Chicken Spinachano

Makes 4 servings

Chicken served with marinara sauce on a bed of spinach and covered with fat free mozzarella cheese

Ingredients
16 oz chicken breast
20 oz tomatoes
1 tbsp garlic
1 tsp basil
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
4 oz fat free mozzarella cheese
4 cups spinach
Directions
  1. saute tomatoes (I used canned diced) garlic and basil for 15 minutes in a sauce pan (you can add a little cooking wine and seasonings of your choice to marinara)

  2. Cut chicken breast in half so you have four pieces

  3. Pound out chicken breast and lightly season with salt and pepper and garlic powder.

  4. Spray chicken with cooking oil and broil until cooked flipping once.

  5. Place spinach in greased pie plate. Rest chicken on top of the spinach.

  6. OR

  7. Fry chicken on stove in non-stick pan until each side is lightly brown (about 7 minutes per side)

  8. Generously cover chicken with marinara sauce.

  9. Sprinkle with mozzarella cheese

  10. Bake at 350 for 10 minutes until cheese is melted and spinach is cooked.
