Chicken served with marinara sauce on a bed of spinach and covered with fat free mozzarella cheese
|
Ingredients

oz chicken breast |
| 20 |
oz tomatoes |
| 1 |
tbsp garlic |
| 1 |
tsp basil |
| 1/2 |
tsp garlic powder |
| 1/2 |
tsp salt |
| 1/4 |
tsp pepper |
| 4 |
oz fat free mozzarella cheese |
| 4 |
cups spinach |
Directions
- saute tomatoes (I used canned diced) garlic and basil for 15 minutes in a sauce pan (you can add a little cooking wine and seasonings of your choice to marinara)
- Cut chicken breast in half so you have four pieces
- Pound out chicken breast and lightly season with salt and pepper and garlic powder.
- Spray chicken with cooking oil and broil until cooked flipping once.
- Place spinach in greased pie plate. Rest chicken on top of the spinach.
- OR
- Fry chicken on stove in non-stick pan until each side is lightly brown (about 7 minutes per side)
- Generously cover chicken with marinara sauce.
- Sprinkle with mozzarella cheese
- Bake at 350 for 10 minutes until cheese is melted and spinach is cooked.
