A savory tomato based soup that incorporates all the summer vegetables in the garden. Very filling, low in calories and high in nutrient.
| 1 | pepper, green |
| 1 | pepper, red |
| 1 | cup beans, snap |
| 1 | cup zucchini |
| 1 | cup eggplant |
| 2 | cups tomatoes |
| 2 | cups tomato juice |
| 2 | tablespoons basil, fresh |
| 2 | tablespoons parsley, fresh |
- Chop the peppers and cut the green beans into 2" pieces.
- Dice the zucchini and eggplant
- Peel, seed and dice the tomatoes to yield 1 cup
- Combine all the ingredients in a pot and simmer, covered for 20 minutes.
- Serve hot or cold
- Makes 8 large bowls
