Claire's End of The Garden Soup Recipe

A savory tomato based soup that incorporates all the summer vegetables in the garden. Very filling, low in calories and high in nutrient.

Ingredients
1 pepper, green
1 pepper, red
1 cup beans, snap
1 cup zucchini
1 cup eggplant
2 cups tomatoes
2 cups tomato juice
2 tablespoons basil, fresh
2 tablespoons parsley, fresh
Directions
  1. Chop the peppers and cut the green beans into 2" pieces.

  2. Dice the zucchini and eggplant

  3. Peel, seed and dice the tomatoes to yield 1 cup

  4. Combine all the ingredients in a pot and simmer, covered for 20 minutes.

  5. Serve hot or cold

  6. Makes 8 large bowls
