great for breakfast w/low fat cream cheese

Ingredients
1 1/2 cups pumpkin, canned
2 eggs
6 tbsp whole wheat flour
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp brown sugar
2/3 cup milk, nonfat powdered
1 tbsp pumpkin pie spice
1 tsp vanilla
Directions
mix all, put in sprayed muffin tins, bake 350 for 15 - 18 mins
