I use Delicata squash, which makes this amazing.

Ingredients
| 2 |
tablespoons vegetable oil, canola or other |
| 1 |
cup chopped onions |
| 2 |
garlic cloves, minced or pressed |
| 2 1/2 |
cups winter squash, peeled and cubed * |
| 2 |
celery stalks, diced |
| 1/2 |
cup carrots, peeled and diced |
| 2 1/2 |
cups potatoes, cubed |
| 1 |
teaspoon dried oregano |
| 1/2 |
teaspoon ground black pepper |
| 6 |
cups water |
| 4 |
cups chopped kale |
| 1 1/2 |
cups cooked beans, or canned cannellini (15-ounce can, drained) |
Directions
- Warm the oil in a large soup pot on medium heat.
- Add the onions and garlic, and sauté for 5 minutes.
- Add the squash, celery, carrots, potatoes, oregano, salt to taste, pepper, and water and cook for 10 minutes or until the potatoes are almost done.
- Add the kale and beans and simmer for another 5 to 7 minutes, until the kale is tender and the beans are hot.
