Potato and Sausage Casserole Recipe

Makes 6 servings


Hearty, warming

Ingredients
1 tbs olive oil
4 oz turkey (bacon)
2 large onions
2 garlic cloves
16 oz turkey sausages
4 potatoes, (baking) peeled and thinly sliced
1/4 tsp sage
1 1/4 cups vegetable broth
1 salt
1 pepper
Directions
  1. Preheat oven 350'. lightly grease shallow earthenware dish.

  2. Heat oil in pan. Fry bacon (2 mins), onios (5-6 mis) and garlic (1 min). Remove mixture and set aside.

  3. Fry sausages in same pan for 5-6 mins until golden brown.

  4. Arrange potatoes on base of pan. Sppon the bacon mixture on top. Season and spirnkle with sage. Pour over the stock and top with the sausages.

  5. Cover and bake for 1 hour, until the potaotes are tender.
