Smothered Chicken Breasts Recipe

Makes 5 servings


Chicken smothered in cheese, bacon, and caramelized onions. Slightly indulgent for a special occasion.

Ingredients
15 oz chicken breasts, boneless & skinless
1 large vidalia onion, sliced
2 tbsps brown sugar
5 oz bacon, reduced sodium
5 tbsps monterey jack cheese, shredded
Directions
  1. Cook bacon in frying pan. You should have at least 2 pieces per chicken breast. Cook to desired doneness, transfer to paper towels. Pat off grease.

  2. Drain all but 2 tbsps bacon drippings. Carmelize onions in drippings. Add 2 tbsps brown sugar and cook until onions are clear and flexible.

  3. Cook chicken breasts as desired, either broil or pan fry. Grill, perhaps, if you have the time.

  4. To arrange meal, place one cooked chicken breast on each plate. Sprinkle with shredded cheese, top with bacon and carmelized onions.

  5. Enjoy! Serve with a green salad and/or mashed potatoes, if so desired.
