Chicken smothered in cheese, bacon, and caramelized onions. Slightly indulgent for a special occasion.
| 15 | oz chicken breasts, boneless & skinless |
| 1 | large vidalia onion, sliced |
| 2 | tbsps brown sugar |
| 5 | oz bacon, reduced sodium |
| 5 | tbsps monterey jack cheese, shredded |
- Cook bacon in frying pan. You should have at least 2 pieces per chicken breast. Cook to desired doneness, transfer to paper towels. Pat off grease.
- Drain all but 2 tbsps bacon drippings. Carmelize onions in drippings. Add 2 tbsps brown sugar and cook until onions are clear and flexible.
- Cook chicken breasts as desired, either broil or pan fry. Grill, perhaps, if you have the time.
- To arrange meal, place one cooked chicken breast on each plate. Sprinkle with shredded cheese, top with bacon and carmelized onions.
- Enjoy! Serve with a green salad and/or mashed potatoes, if so desired.
