chicken fingers

Makes 6 servings

honey mustard

Ingredients
1 lb chicken breasts
1 cup all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
3/4 cup milk (I use skim)
Directions
  1. Cut chicken into ½ x 2-inch strips.

  2. Mix the honey and the Dijon mustard together in a small bowl until well blended.

  3. Set aside. (It is recommended that you prepare this sauce 1 or 2 days ahead of time so that the flavors have time to blend.)

  4. Mix flour, salt and pepper in a shallow bowl. Dip chicken in milk.

  5. Roll in flour mixture to coat well. Place chicken on waxed paper.

  6. Pour ¼ inch of canola oil into a large heavy skillet. Heat over medium-high heat to 350°F.

  7. Divide chicken into batches.

  8. Place chicken in an even layer in hot oil.

  9. Fry, turning once, for about 3 minutes on each side or until golden brown and crisp.

  10. Drain on paper towels.
