Oj & Oats Cake Recipe

Makes 16 servings


Let cool completely before serving. Very moist and delicious cake.

Ingredients
1 1/4 cup water (boiling)
1 cup quick oats
1/2 cup margarine or butter
1 cup sugar
2 eggs
1/4 cup frozen orange juice concentrate
1 tsp. vanilla
1 3/4 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
Directions
  1. Cream butter and sugar - add eggs, juice andvanilla. Mix dry ingredients together and add oats and orange juice mixture. Pour into greased 13 x 9 inch baking dish. Bake 325 - 350 for 40 minutes.

  2. Topping:

  3. 1/2 cup brown sugar, 1/4 cup marg or butter,

  4. 2 Tbsp orang juice - mix in saucepan and bring to boil for 1 minute. Add optional 1 cup coconut and 1/2 cup walnuts. spread over cake and broil until browned.
