Cauliflower Cheese Recipe

Makes 6 servings


Spicey cauliflower cheese.

Ingredients
575 g cauliflower
10 g chili, chopped
50 g butter
2 garlic cloves, crushed
10 sun-dried tomatoes, sliced
2 tbsps plain flour
600 ml milk, fat free
300 ml plain yogurt
175 g cheddar cheese, grated
2 tbsp bread crumbs
1 tbsp parmesan cheese, grated
2 tbsps olive oil
1 salt and pepper
Directions
  1. Steam cauliflower florets.

  2. Make white sauce with garlic, chilli, tomatoes, fried in butter for 2 mins. Stir in flour to smooth paste.

  3. Add milk. Add yogurt. Gently heat up to simmer. Simmer 2 mins.

  4. Add cheese.

  5. Pour suace over caluiflower.

  6. Mix together topping (bread crumbs, parmesan cheese and bread crumbs). Grill until brown.
