Lime-Grilled Fish with Salsa Recipe

From the American Diabetes Association. Lime-grilled fish is a taste straight from sunny Mexico, and perfect for a backyard summer barbecue. Serve with 1/4 cup salsa per serving. Ingredients: olive oil, lime juice, 1 lb raw firm fish fillet such as red snapper or orange roughy cvt

Ingredients
1 tbsp olive oil
1 tbsp lime juice
12 oz firm orange roughy (15232), red snapper or other firm fish fillet, net from 1 lb?
Directions
  1. Prepare a charcoal grill, or preheat the broiler and prepare the broiler pan with nonstick pan spray.

  2. Combine the oil and lime juice; brush over the fish. Grill or broil 4 to 5 inches from the heat source until the fish is opaque, about 6 minutes (depending on the thickness of the fish). Serve immediately, topped with salsa and fresh lime slices.
